Think buffalo chicken meets quinoa … are you drooling yet?!?! In this house, we love buffalo chicken dip. We also love all things hot sauce. (As seen in like half the recipes on here). This recipe brings the delicious spicy goodness of buffalo chicken dip into a healthy, tasty quinoa salad that is perfect for lunches! The kicker? It is vegetarian. Sorry friends, no chicken in this one. I loaded it with veggies, quinoa, and a greek yogurt sauce topped with blue cheese crumbles. DIVINE.
Today is GORGEOUS out. How about where you live? It is 75 and sunny. But there is enough of a breeze that it is just the perfect temperature! I spent the morning running a few errands, then I remembered I had some Kohls cash that started yesterday! So, I strolled into Kohls and got a super cute dress and some tanks for summer. Success! Then, I stopped at the library and picked up some books on herbs and spices for healing and wellness. Second score! Then I came home and one of the dogs had pooped all over the sunroom … wtf. They never do that! So, after that debacle, I got back on my happy train and went outside and did all sorts of planting! Then my 85 year old neighbor offered me a beer. It is Tuesday at noon, but sure! Why not! A beer did sound pretty good after a busy morning planting (and cleaning up poop…)! So we sat there and talked about canning, brewing beer, and making homemade wine for an hour. During which time, I got super sun burnt. But, oh well. Then, I did some more planting, and finally settled into the gravity chair to read for a little while and relax. Then a bug somehow got down my shirt and into my sports bra and was biting me!!!! Now I am sitting outside typing away under the umbrella. Perfection!
But, back to this blue cheese topped deliciousness. The pictures don’t really do it justice at all. So, you will just have to trust my judgement on this one and try it!!! If you love buffalo chicken, you are going to love it! And, of course, if you want to add chicken, by all means do it! No problem! And if you don’t like blue cheese, just leave it out. No biggie. However you whip it up, you are going to love it. It is so yummy eaten cold, which makes it perfect for lunches on the go! And the quinoa is so filling, it really helps you get through the afternoon slump at work. Can we though, for a minute, take a look at these freaky carrots I got?! When I went to the grocery store, they only had organic rainbow carrots. Okay, fine by me, I’ll get them. But LOOK!!!
Weird, right?! They tasted totally normal. But when I cut them open and saw that bright yellow middle, I was kind of thrown off for a second. Another perk to this recipe, is that you only dirty 2 things: 1) the pot to cook the quinoa and 2) a mixing bowl to stir it all together. Success!!
Ready for the recipe!?!
- 1 cup quinoa
- 2 cups water
- 1 5.3 ounce container plain greek yogurt
- ¼ cup hot sauce (or to taste)
- 4 ounces blue cheese, crumbled
- 2 carrots, diced
- 3 celery stalked, diced
- 1 can cannellini beans, drained and rinsed
- Bring water and quinoa to a boil over medium high heat. Reduce heat and simmer, covered, for 15 minutes. Or until quinoa is cooked.
- In a large mixing bowl, mix together all remaining ingredients (leaving a little blue cheese for topping, if you like).
- Add cooked quinoa to your mixing bowl, stir well. Top with remaining blue cheese, if desired.
- Serve cold.
