There is something about smoothies for breakfast lately … I just can’t get enough.  I think it is partially the portability factor.  Especially in the summer when I am running all over trying to fit as much into a day as possible.  It is also partially that they are so dang good and refreshing.  Nothing better on a hot day at work than drinking a yummy, frozen smoothie.  So, instead of my typical berry based smoothie, I went another route to mix it up.  Okay, let’s be honest I was just day dreaming of piña coladas and going to Aruba!!  But, I wound up with this totally delicious tropical breakfast smoothie.

Buffalo Quinoa Salad

Think buffalo chicken meets quinoa … are you drooling yet?!?!  In this house, we love buffalo chicken dip.  We also love all things hot sauce.  (As seen in like half the recipes on here).  This recipe brings the delicious spicy goodness of buffalo chicken dip into a healthy, tasty quinoa salad that is perfect for lunches!  The kicker?  It is vegetarian.  Sorry friends, no chicken in this one.  I loaded it with veggies, quinoa, and a greek yogurt sauce topped with blue cheese crumbles.  DIVINE.

Homemade Pesto

Homemade pesto?  Yes please.  My mom is a big time pesto fan, so we used to eat it all the time.  I also love pesto, but for whatever reason, I never think to buy it!  (wtf is wrong with me?)  But, this past weekend when I looked in my freezer and saw loads of basil that I picked all season long and dutifully froze … I realized I needed to do something to use it all up!!  I already have new, fresh basil growing for this year (see: one pot herb garden).  My mind instantly went back to dinners at mammas house and I knew exactly what I wanted … PESTO!
