This dip is inspired by the good people at my work who know I am in love with cilantro. We got some bunches of green herbs in, and from a distance, it could go either way. Parsley or cilantro look pretty similar. Don’t worry, Heather to the rescue, I grabbed a bunch and took a huge whiff of it. Parsley. Womp womp. Meanwhile, my coworker was keeled over laughing about how I just shoved it right up to my nose and was hoping it was cilantro. She still laughs about it and says it is one of her finer memories of me haha. But hey, what can I say? I don’t mess around when it comes to cilantro. The next day, she brought in a dip that will change your life. This bad boy is jam packed with cilantro and sour cream. She let me take the rest of what we didn’t devour right on the spot home with me and Matt felt the same way. That is some good sh**.
Now personally, I don’t have a huge issue with sour cream. It is just one ingredient and natural. But, it isn’t the best thing to eat in large quantities and I get that. Not to worry, this girl has got your back. I tried a few different variations of this dip and came up with one that I really like. It uses my other main squeeze, avocado. If you read my guacamole post you know I have a bit of a love affair with avocados. I left some sour cream in it to give it that thick creaminess that is so amazing, but I split the difference with greek yogurt. Have you noticed greek yogurt is my answer for everything? It is just so versatile and healthy you really cant beat it. Throw in some jalapeño and some lime juice, and you are good to go!
Now, you don’t just have to take my word on it. I had my family up this weekend and I made this for everyone to snack on. It got good reviews from everyone and they were all going back in for more, so I consider that a success! This isn’t just a dip though, the original recipe from my coworker, was a marinade for shrimp on the grill. Hence the shrimp in the pictures, I just happened to have some cocktail shrimp leftover the fridge from when everyone came up so I was inspired. I don’t normally just have shrimp laying around to photograph, hahaha. Mine is a little thicker than the original, but it was still an awesome dip for shrimp. I am also going to make this a staple for burritos and quesadillas. It gives you that light, fresh, cooling element that a lot of people use sour cream for but this would pack way more of a flavor punch! So good. I was making this for a party though, so it made quite a bit. You might want to cut the recipe in half if you are just making it for a few people or as a burrito topping. Not to mention, you just throw everything in the blender and you are done. I like easy recipes, so this one takes the cake!
- 1½ cups packed cilantro leaves
- 2 avocados, halved, seeded, and scooped out of the skin
- ½ cup greek yogurt
- 2 jalapeños, seeds removed
- ½ tablespoon lime juice
- 8 ounces sour cream
- In a blender/food processor/ninja, mix together all ingredients until smooth and creamy.
- Serve cold as a dip, or as a topping for burritos/quesadillas.
