Cucumber & Cherry Tomato Salad

This simple, fresh, and natural salad is the perfect lunch for a hot summer day.
  • 4 cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • ¼ of a red onion, sliced
  • 2-4 ounces feta (your preference)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon italian seasoning
  1. In a bowl, mix together cucumbers, cherry tomatoes, red onion, and feta. Chill until ready to serve.
  2. In a small bowl, mix together olive oil, balsamic vinegar, dijon mustard, and italian seasoning. Keep dressing on the side until serving. Depending how much dressing you like, you can double the dressing if needed.
