6 healthy lunch recipes for hot summer days

This has been one of the hottest and driest summers we have had, at least in our area, in a couple of years.  We rarely get any days at or close to 90 degrees and we have had them in surplus this year.  We have also had very little rain, with the exception of a HUGE storm that just rolled through this morning (thank you thank you thank you!!!).  Now, I am loving the summer heat, don’t get me wrong.  But, you must remember, I work at a greenhouse.  Outdoors.  All day.  Often times baking in the glass or plastic greenhouses that are upwards of 100 degrees daily.  So, this summer, I have mostly been attached to a hose making up for the lack of rain.  The moral of the story?  When it is that hot out you don’t have an appetite for anything.  But, if you don’t eat something, you will probably faint.  So here is a roundup of my 6 all time favorite lunches to get you through those hot summer days.  They are cool and refreshing and keep you energized for a tough day outdoors.

1. HUMMUS AND VEGGIES WITH FRUIT ON THE SIDE

Not even technically a “recipe” but this has been my go-to lunch for the past week and a half.  A big thing of hummus with carrots, celery, broccoli, and/or cauliflower for dipping.  Then I always have a big bowl of fruit too.  Either cantaloupe, strawberries, pineapple, apple, etc.  The whole lunch is nice and cool and super good for you!  The hummus also helps keep you feeling full all afternoon long.  I know, this may not sound like much of a “traditional lunch” but trust me on this one.  I always feel full and satisfied, but not bogged down by food!

Bonus points if you want to make your own hummus!!  I’ve got my go-to recipe RIGHT HERE for jalapeño garlic hummus!!!

2. CUCUMBER, TOMATO, AND FETA SALAD

What can I say?!  Summer in a bowl.  Fresh, cool, refreshing.  You get the idea!  This is awesome for three reasons… 1) you can probably pick half the ingredients from your garden 2) super healthy! and 3) it tastes so fresh and so clean, clean.  (no, it REALLY does!!)  I’ve got a cucumber about ready to pick and I am whipping up a big batch of this tomorrow!

3. HUMMUS WRAPS

If you feel like you need just a smidgen more than number 1 … put it on a wrap, baby!  These things are awesome, portable, veggie packed wraps of goodness.  I load them up with greens, then hummus, then bring on the veggies!  Then call Matt into the kitchen to help me roll them up.  He worked at Subway in high school and brags about his “sandwich artist” skills.  Problem with me is I always load them up way too much and they are near impossible to roll.  See why I need the expert now.  If I try to roll them there is hummus and veggies all over the floor and counter.  (True statement… it’s happened).  But, aside from being overloaded by yours truly… these wraps are the perfect healthy lunch and the best part is you can take them on the go with you!

4. BERRY GREEK YOGURT POWER PARFAIT

This recipe is basically like eating ice cream for lunch.  Okay, okay … not quite.  But, it is pretty darn close.  Berries, creamy yogurt, peanut butter, oats, chia seeds.  I mean, it is heavenly.  It is also really filling; due to the greek yogurt, oats, peanut butter, and chia seeds!  This is one of my all time favorite summer lunches.  You will love it too.  I promise you.

5. BIG ASS SALAD

Yep, I said it.  There are no rules in the salad game.  Grab a bowl and load that bad boy up!  Fresh greens, veggies galore, hard boiled eggs, beans, meat, etc. etc.  I don’t care what you put in it, just make it!!!  Admittedly, I don’t eat a lot of salads.  I just don’t.  Not really my vibe most of the time.  But, when summer rolls around, I am all about them!  They just taste like summer.  I have been eating salads a lot this summer.  They just hit the spot when nothing else sounds appetizing.  You can even throw a few croutons on there, I won’t yell at you … promise!

Bonus points if you want to make your own dressing.  My fave is the same dressing on my cucumber tomato salad.

6. SMOOTHIES

My milkshake brings all the boys to the yard.  Damn right, it’s better than yours.  I can teach you, but I’ll have to charge. Na, na, na, na naaaaa.  Okay, well, I don’t know where that came from.  That was weird, sorry guys lol.   Are those even the words?  Anyways, smoothies are basically like grown up versions of milkshakes.  So, if you wanna bring all the boys to the yard on a hot summer day … whip up a smoothie.  They are the best thing to cool you down.  I call most of mine “breakfast smoothies” but they can be ANY time of the day smoothies.  With all the added goodies I throw in mine, they are the perfect lunch idea.

My fave flavor combinations are … peaches and cream, mixed berry, and tropical!  I think I am going to make a tropical one for lunch today!
