Fall is here! Fall is here!! We went from 9o degree days to cool, breezy 60s. Which means one thing: IT’S SOUP SEASON!!!! This stuffed pepper soup is one of my favorites and I can’t believe I haven’t posted it until now! Remember my deconstructed stuffed peppers? Well, this is basically the soup version. And it is oh-so-delicious. It has sausage, brown long grain rice, tons of peppers, tomato juice, and chili sauce to give it that classic stuffed pepper taste. But, probably the best part? It’s a one pot meal! Once you cook the sausage in your soup pot, you add all of your other ingredients and basically forget about it for an hour. That’s my favorite type of recipe.
Is anyone else a Mexican fanatic? I could eat Mexican food at every meal. Without question. I LOVE IT. I try to diversify for the blog with other flavors so that you guys don’t just totally lose your minds, but really … Mexican flavors are my jam. So hopefully you guys are fans too. This recipe is one of my favorites when I am craving Mexican. It is all the goodness of a burrito, minus the tortilla. AKA-you don’t end up shooting rice and beans out the back end of the burrito all over the floor. This is fork territory. This recipe is a couple of components that you can set out and let people make their own burrito bowl to fit their taste. You could add meat if you wanted to, but I always just do black and pinto beans and it is plenty for us.
The first “component” is just good ‘ole brown rice. Perfect base. Then I add in some black and pinto beans that have been cooked with some tomatoes and seasonings. YUM. You’ll be a fan. Then I sauté up some peppers and onions to throw on top. But don’t think we are done there!!! Guac, a sprinkling of cheese, and homemade salsa finish this bad boy off. OMG. Heavenly. Pictures really don’t do it justice. You just need to dive on in and trust me. You’ll be happy you did.
Good morning friends! Ahh, the early morning sun is starting to come through the windows, my coffee just finished brewing, and I’ve got nothing on the agenda for the morning. Aren’t these the best mornings ever? I love love love being able to relax in our sunroom, read, talk, and sip on our coffee. Perfection. But then, my tummy started grumbling so I had to start thinking about breakfast. I am ashamed to say I have never even heard of a frittata until about a month ago. Gasp! I know! I have been living under a rock. Now I am obsessed haha.
