I am a little late to the pumpkin party this year.  And by a little, I mean months.  Typically August is when everyone goes pumpkin crazy and gets their first pumpkin spice latte of the year.  Well, it’s basically December now.  But, in my defense, we had such an unseasonably warm fall that I just wasn’t feeling the pumpkin vibes.  I was still all summer veggies and grill vibes.  But, I realized if I didn’t buy my pie pumpkins soon, I wouldn’t get any.  And that is just wrong.  I need pumpkin butter in my life.  So, I stocked up and threw a batch in the crock pot today.  But, I didn’t want to waste all those yummy seeds!  So, I decided to write a quick post about how I roast mine up.  Trust me, roasted pumpkin seeds are delicious even after Thanksgiving has passed.

Butternut, Pumpkin, & Sweet Potato Soup

This soup should be called “everything orange” soup.  Apparently that was the theme when I was deciding what to throw in here.  Ontop of butternut squash, pumpkin, and sweet potato, I also threw some carrots in there.  Hehehe.  Really, in my defense, I had a farmers market haul of 2 pumpkins, 3 butternut squashes, 2 sweet potatoes, and a square foot of carrots out back…. I needed to use up some of this stuff.  My first attempt at this soup was just okay.  It wasn’t anything spectacular really and I used freshly grated ginger in it, which just wasn’t doing it for me.  It was a really really sweet soup.  So, I set off again this weekend to make the perfect butternut soup and I think I’ve done it. This soup is delicious!  I added a little bit of spice, started it off with caramelized onions, roasted all my veggies, and finished it with a touch of creaminess.  Oh yeah!

Homemade Pumpkin Butter in Crock Pot

Hi all!

Happy Monday! Even though it is Monday, we still have some things to be thankful for.  #1 on my current list- Pumpkin Butter!! I had never even heard of pumpkin butter until a friend asked if the farmers market I work at carried it.  They did carry it, but I figured I could make it myself! If you have ever made apple butter (recipe coming soon) it is basically the same idea.  Throw the ingredients in a crock pot and forget about it!
