Fall is here! Fall is here!! We went from 9o degree days to cool, breezy 60s. Which means one thing: IT’S SOUP SEASON!!!! This stuffed pepper soup is one of my favorites and I can’t believe I haven’t posted it until now! Remember my deconstructed stuffed peppers? Well, this is basically the soup version. And it is oh-so-delicious. It has sausage, brown long grain rice, tons of peppers, tomato juice, and chili sauce to give it that classic stuffed pepper taste. But, probably the best part? It’s a one pot meal! Once you cook the sausage in your soup pot, you add all of your other ingredients and basically forget about it for an hour. That’s my favorite type of recipe.
I love when things are easy. Especially when it comes to dinner during the week. Between working full time, entertaining the dogs, cleaning the house, working on the blog, and trying to keep up some kind of workout regime … there isn’t a lot of time left over for slaving over the stove for hours cooking dinner. I’m more of a half hour and under gal. Which is why I love making big pots of soups and bakes that you make one day and then have leftovers for the next few days. I love leftovers. But, when you run out of leftovers … you can whip up this super easy spicy tomato soup! Did I mention the best part? FOUR ingredients. That is IT! The other bonus? You probably have everything in your pantry already.
There is nothing better than soup made with all pantry/freezer items. Am I right? This soup is the perfect thing to battle cold winter days! And you don’t even need to leave your house to make it!! Yayyy!!! Well, maybe you do. I’m not sure how stocked your pantry and freezer are lol. We all know I have a bit of a freezer problem. As seen here and here. And I actually just spent a whole weekday night reorganizing and taking inventory of the freezer and chest freezer a few nights ago. I am telling you, I live a wild and crazy lifestyle.
Hello, lake effect snow storms and 18 degree highs… how I’ve missed you …. NOT. I guess I can’t complain though, we are normally a few months deep by now in snow and we’ve only gotten a handful of storms so far this year. We actually took the dogs for a walk Saturday AND Sunday this weekend because it was in the 50s. Which, for North West PA, is kind of crazy for January! So, I’ll take it. Plus, colder weather means an excuse to eat as much soup as possible. Which, I am always on board with. You know I love soup. I really hope you guys do too. This french onion soup is the perfect thing to warm up on a cold day. Loaded with 4 types of onions, red wine, and gooey cheese. This is the perfect treat when you deserve something fancy for dinner.
I can’t believe it has taken me this long to post my chili recipe on here! This is one of our favorite soup recipes and one that we have been tweaking for some time. There is a ski resort around us that Matt claims makes the best chili of all time. So we have tried our hardest to duplicate it going by taste. This has been our go to chili recipe for a couple of years now, so I hope you guys really enjoy it too! It is loaded with 5 kinds of beans, peppers, and seasonings! It does call for ground beef and Italian sausage, but they could be easily omitted if you are a vegetarian. Just throw some more beans in! Yum!
