There is something about smoothies for breakfast lately … I just can’t get enough. I think it is partially the portability factor. Especially in the summer when I am running all over trying to fit as much into a day as possible. It is also partially that they are so dang good and refreshing. Nothing better on a hot day at work than drinking a yummy, frozen smoothie. So, instead of my typical berry based smoothie, I went another route to mix it up. Okay, let’s be honest I was just day dreaming of piña coladas and going to Aruba!! But, I wound up with this totally delicious tropical breakfast smoothie.
So instead of actually traveling to Aruba or even making the effort to go sit at the lake and pretend it was a tropical beach. I kicked back in my gravity chair in my back yard and enjoyed my nice tropical breakfast smoothie. I pretended the swaying oak trees were palm trees and all was good. I didn’t even put any rum in it, it is a tropical BREAKFAST smoothie after all. But, if you wanted to turn this into a dessert type smoothie, add the rum my friend. It would be delicious.
And you know it wouldn’t be a SFN smoothie without some superfood power right? Well I’ve got you covered!! This baby’s got coconut oil in it! Say wha!?! But I didn’t stop there, of course!! I added some chia seeds, greek yogurt, and kiwis to really kick it up to the next level. Meaning this tropical breakfast smoothie is delicious and totally good for you!! You are so welcome. I also added some oats to keep you feeling full all morning long!
I actually am not a huge mango fan. But I went to the grocery store this morning before eating breakfast and I was like a raging monster through the produce department. I wound up with mangoes, kiwis, pineapple, lemons, oranges, avocados, broccoli, spinach, celery, tomatoes, cucumbers … and it just goes on. I also came home with a lot of cheese products. Suffice it to say, it wasn’t my most budget friendly trip. Especially considering my actual shopping list had 5 things on it. Oh well, I wound up with tasty smoothies! But, the point of my story, if you don’t like mangoes or just don’t want to buy them or one of the other ingredients, no big deal. Just fill in the gap with a similar fruit. I actually made this with cantaloupe last week and it was delicious as well! I always freeze any of my smoothie leftovers in mason jars (just make sure you leave ample headspace for expanding when it freezes). Then, I take them out the night before and put them in the fridge. Voila! Instant breakfast.
- ½ cup chopped pineapple
- 1 mango, cut into chunks
- 2 bananas, frozen or fresh
- 2 kiwis
- ⅔ cups greek yogurt, plain or vanilla
- ½ cup orange juice
- 2 tablespoons coconut oil
- 1 tablespoon chia seeds
- ½ cup old fashioned oats
- Add all ingredients to your blender and blend until well combined.
- Enjoy cold.
